The highly-anticipated international gastronomical festival, Madrid Fusion brought the galleon back in Manila last April 7-9, 2016 with the theme “Manila Galleon: East Meets West”. The three-day event held at SMX Convention Center and SM By the Bay converged the hottest internationally-renowned chefs for the second time around.
The top chefs who demonstrated their culinary expertise were Spain’s legendary Fernando Perez Arellano, Jordi Butrón, Ricardo Camarena, Dani García, and Joan Roca along with Leah Cohen from the United States, Virgilio Martínez from Peru, Enrique Olvera and Jorge Vallejo from Mexico, Yoshihiro Narisawa from Japan, David Thompson from Thailand, Nurdin Topham from Hong Kong, Kevin Cherkas from Indonesia, Jungsik Yim from South Korea, our very own Michael Aspiras, Amy Besa & Romy Dorotan, Myke ‘Tatung’ Sarthou and Asia’s top female chef Margarita Fores.
These culinary virtuosos attended, discussed, and presented their knowledge and artistry about their craft. The event was made more exciting this year with eastern and western cuisines prepared by a hundred Michelin-starred and finest Filipino delegates combined.
